Ingredients

Fruit Filling

  • 24 ounces of frozen fruit(I like a mixture of blueberry, strawberry, pineapple)
  • 1/2 cup  of sugar
  • 1 tbsp of cornstarch
  • orange
  • 1 tbsp of Lemon juice

Oatmeal Pastry Topping

  • 1/3 cup  of all purpose flour
  • 1/4 cup of light brown sugar
  • 1/2 tsp of kosher salt
  • 1 cup of old fashoined Oatmeanl, Divided into 3/4 and 1/4 cup
  • 1 stick of butter

Instructions

Fruit Filling Prep

 

Step 1

 Heat the 1 tsp of cooking oil in a large pan over medium heat

Step 3

Add the pulled pork – cook 2-3 minutes (If you are using ground pork – cook until no pink is shown)

Step 4

Add the Coleslaw mix – stir fry for 3-4 minutes or until cabbage starts to wilt.

Step 5

Add the soy sauce and sesame oil to the mix – stir fry for 1-2 minutes until completely mixed.

Step 6

Remove from heat and set aside.  Let the mixture cool before rolling the eggrolls or the wrapper may bust.

Step 7

Scoop half of cup of mixture into the middle of the egg roll wrapper.  Fold and roll tightly sealing the edges by brushing with the beaten egg .  (see diagram for wrapping instructions)

Frying Instructions

Step 1

In a medium pot pour your oil until 1 inch deep (Peanut oil recommended: vegetable, canola would work as well)

Step 2

Heat your oil to 350 degrees (Use a thermometer to regulate the temperature)

 

 

Step 3

Place the egg rolls in the oil flipping them once after about 2 minutes or until golden brown

Step 4

Remove from heat and set aside.  Let the mixture cool before rolling the eggrolls or the wrapper may bust.

Step 5

Place on a plate with paper towel to absorb excess oil.
